Sun-dried tomatoes in gelatinous sludge

I got a big jar of sun-dried tomatoes from Costco. The oil in the jar has congealed in the fridge, which is bad for two reasons: (1) it's totally gross, and (2) a lot of that oil will stick to the tomatoes and get into my meal. The jar says "If oil congeals, return to room temperature," but I don't want to deal with that every time I need sun-dried tomatoes. Is there something else I can do to keep the oil from solidifying? |
