Help me win Easter!

What's a beautiful show-stopping dessert I can make for my family's Easter dinner?

I'm looking for a recipe for a special dessert to make this weekend for Easter. For this past Christmas, I made this fabulous modified Buche de Noel and it was a huge success, so that's about the level I'm at with baking. My mom is handling the dinner, so I just have to worry about this dessert. Ideally it would be something that seems appropriate to the holiday.

I have a traditional kitchen with the usual accoutrements but I do NOT have a stand up mixer. I have several grocery stores around to buy whatever I might need and I have all day Friday and some of Saturday to bake and assemble this dessert.

We will be six adults and no kids, so I don't want anything overtly childish like cupcakes. My mom loves chocolate and hates lemon, so I'd like to keep that in mind. I also dont want to leave her with a ton of leftovers she wont eat, so whatever I make should be relatively small (to feed 6-8 people). We will already have the traditional Italian Easter cookies :)
