Is there a way to record/document the title and text of notifications on Android in real time?

Here's my situation. I share a couple of accounts, and we need to take care of requests as they come in. These may come by email, FB messenger, etc. When messages come in, if someone else reads them first they disappear from my notifications. The obvious solution would be to change the way we do this but I'm not in a place to make those changes.

So I would like to automatically record all the notifications I get on Android as they come in. Ideally, I would like them logged in one widely usable document (word doc, plain text, excel) rather than have then locked away in one app, or at least be exportable.

Has anyone done anything like this?
