Worth contesting a will change made by person with dementia?

An elderly acquaintance recently passed. He was single and childless and all of his possessions were to go to an animal sanctuary. He was extremely proud of this and often talked about it over the years. He has been mentally declining with dementia for the last 5 years. A year ago he changed his will and left his estate (valued at around $2M based on housing prices) to the part time caregiver who has worked with him for the last 4 years. Can we/should we do anything?

Incidentally - if he left his estate to employees I can much more easily imagine him leaving it (or including) his cleaning lady of 17 years or gardener of 25 years rather than just to his caregiver. And I can't imagine him wanting to leave it to people rather than critters at all - he notably hated people but loved animals. This feels unjust to me even if legal. Advice? This is in California (note I would never have a legal or financial stake in this)
