Chromebook decision paralysis

I need to get two chromebooks for my kids for school in the Fall there are so many options my head is spinning. Requirements inside.

I have a 7th grader and a 2nd grader who will be doing remote schooling in the Fall. I am trying to put a clear divide between recreational screen time and school screentime and these devices are going to be strictly for schoolwork but my 7th grader is entering their first year at a performing arts school this Fall and so their work will have a more creative bent with some video editing etc. As a family we tend mostly use Macs so the kids are used to a certain level of quality with touch pads/mice/keyboards and while a bit of a decrease in quality is fine I want to stay away from anything as janky as the school issued chromebooks of the Spring. Ideally the total budget would be under $500 but I am willing to go up to $600 if I need to. Thank you for your help!
