How do I make my frozen green jackfruit more palatable?

I really love cooking with green jackfruit in brine, so when I saw this bag at the local Indian grocery store I got super excited to try it. Sadly it is really not living up to my expectations. Can you help me figure out what to do with this stuff so I don't feel like I'm wasting food?

The first time, I thawed some on the counter, sliced it up, and added it to a stir fry. As you can see from the packaging, this product is just the fleshy part that surrounds the seed, not the slices of more of the fruit like when you get it in the can. The fruit was leathery and while it smelled quite fruity, its taste was very starchy. Not anything like ripe jackfruit or the canned green jackfruit.

Today, I dropped a bunch, still frozen, into the pressure cooker with the liquids and aromatics for a vaguely carribean 'shredded chicken' type of thing and let it cook for 15 minutes. I just took off the lid and the pieces are gummy and a little stringy? Again, nothing like the other jackfruit which I have pressure cooked for the same amount of time.

So, obviously this product is just not meant to scratch that same shredded meat itch, but what the heck should I do with it instead? Everything on the internet indicates that I should use this interchangeably with the canned kind but I know now that's a lie.
