Where should we go for a short nature vacation?

Looking for recommendations for a short international vacation (from Los Angeles) that includes some time spent in nature, around Thanksgiving. Snowflakes within.

My girlfriend and I have 9 days off in a row over the Thanksgiving period, and we'd like to take an international vacation.

Requirements:

- Not too far. Ideally within a 10 hour non-stop flight of LAX.
- Somewhere that can be done in a week! With two days for travel, that's about all we'll have. I know a week is really too short to "see" any country, but somewhere where travel is easy enough to fit a decent itinerary in.
- Somewhere that can be done on a budget (not full backpacker budget, but looking to spend less than $100 USD for a night of accomodation, for example)
- Not USA or Canada

What we're interested in:

- Nature (Hiking, plants, birds and other wildlife)
- Cities (For culture and history rather than nightlife)
- Food (Both omnivores, love to eat and love trying new things)

Not looking for a beach vacation or to be pampered or anything like that.

The ideal vacation would be something like this: Fly to interesting city, take a day or two to get oriented or explore, spend another couple days hiking or visiting a national park (or parks), then maybe some more time in the same city or another one before flying back.

Strongly leaning towards South (or Central) America, mainly because neither of us have been there before. I'm thinking Colombia maybe?
