Looking for tasty, fun to cook vegetarian/vegan lunches and dinners sized for one person!
Spouse is going out of town for just over a week and I will probably cook a lot due to sheer boredom. I thought I'd challenge myself to eat vegetarian/vegan for the whole week, since my diet is kind of shifting that way anyway. I'd rather make a bunch of small meals than one big pot of food that would feed me for several days. Really something that serves two would be fine because I'd eat it for lunch the next day.
Vegetables I have on hand: broccoli, Brussels sprouts, two huge green cabbages, a couple leeks, a small bunch of somewhat elderly carrots, frozen spinach, frozen peas, mushrooms, Russet potatoes, a couple sweet potatoes I'm scared to look at too closely. I'm trying to avoid going to the store if I don't have to.
Other things in my fridge/freezer/pantry: puff pastry, a ton of fancy dried beans from Rancho Gordo, canned beans (mostly refried), a couple containers of tofu, eggs, a carton of buttermilk with one cup left, a carton of raspberries, onions/garlic, rice (white and brown), hella pasta, farro and some other whole grains, lentils, polenta (the tube kind from Trader Joe's), guacamole, canned tomatoes (chopped and whole), dried mushrooms, tortillas (both burrito and taco size), goat cheese, Parmesan, cottage cheese, flour (whole wheat and white), walnuts, raw cashews, nutritional yeast, a large variety of spices/seasoning blends. I own an instant pot, a slow cooker, two Dutch ovens, a food processor and a stick blender but no regular blender.
I can easily cobble together a few pantry meals and feed myself, but I'm looking for small meals that Mefites love that are also fun and enjoyable to cook. For example, I think one night I'll make this roasted mushroom and broccoli grain bowl. One of my all time favorite meals is this spinach pie from Budget Bytes so I'll probably make that too, though it will be four servings. What else should I make? Thanks! |
