I like a garden that is an untended loveliness. But mine is an untended mess. What to do?

The largest part of my back garden (UK) is about 15x20m. There are two established trees which I do not want to harm. The rest is a mix of long uncut grass, nettles, dandelion plants and encroaching brambles / ivy / other green growing things (I am no gardener!)
I would guess that 40% is weeds / unwanted plants, 60% long grass.

Previous dogs we have owned have dug into the surface. While it does not quite resemble a lunar landscape it is not a flat surface. I would like to reduce the risk of broken ankles.

Desired outcome:
In a year or two, a meadow. Lots of pollinator friendly plants.
I dislike the sterility of a neat mown grass lawn. I want to see bees, butterflies, bugs of any and all descriptions.

Possible solution:
Pay for the garden to be effectively razed, flattened and everything green (apart from the trees) to be eliminated so leaving a blank canvas. Expensive.

Alternate solution:
I use a pet friendly weedkiller (I have cats/dogs), section an area, rake up the deadness after the application and seeing the results, wait a while to be sure no weeds (I am happy this would be months), then bee-bomb. Weed kill as required. Do the next section.

Like I said, I am no gardener and even after a day weeding my thumbs are not green. Does this sound like a reasonable plan?
