mortgage refinance paranoia

I'm late to the refinance but submitted a request online which was followed by about 100 calls and emails from different lenders. How do I verify that the person I'm about to give my personal details to is legitimate?

If I were to go to my local credit union I wouldn't have these concerns, but since they called me and I have no idea who has subscribed to the list I ended up on how can I verify that they're not an identify thief or worse? I get follow up contacts with "here's the form to fill out, we have even better incentives than the last time..." and I know they're selling me something, but this is pushing all my internet paranoia buttons (in general, not one specific lender).

The person I've been working with has a NMLS number and it seems to check out via NMLS consumer access. Should that be good enough? Are they other things to watch out for?
