Gmail OCRs my attachments, including postal covers. Can I turn it off?

Gmail is OCRing all the images sent as attachments to me, including in my case, postal mail. Can I stop it?

I have "Informed Delivery" from the US-ian postal service. I get pictures of my postal mail in an email sent to a Gmail address.

If I search my email for a keyword, results include words such as the names of the senders of pieces of postal mail. This appears to be based on Google OCRing the images of my email and indexing the extracted words. Did I opt into this? Can I shut it off?
Can you direct me to any technical coverage of this?
